Pavlova

Ingredients

1 cup sugar

8 egg whites

1tbs white vinegar

1tbs vanilla essence

Topping

360ml Cream

Strawberry, blue berries and passionfruit pulp or whatever fruit you like

Instructions

Step 1 – Turn oven on to 180c and line a round cake tin with baking paper

Step 2 – Place all egg whites in a mixing bowl, use an electric mixer to form white peaks

Step 3 – Use the electric mixer to slowly combine 1 cup of sugar about 3 tablespoons at a time ( until all sugar is dissolved, taste test to see if you can feel sugar in mixture) I love taste testing

step 4 – fold in vanilla essence and white vinegar

Step 5 – Whip cream and cut fruit to desired shape and size

Step 6 – Place mixture into the prepared cake tin and cook in oven for 1 hour to 1 hour ten minutes

Step 7 – Leave in oven for 25mins with door closed and then open door slightly for at least 25 minutes or until ovens cool (put tea towel or wooden spoon in door to help keep open). ice with whipped cream and place fruit on top.
